KINGS
Kings (chinook) mark the beginning of fresh salmon season around mid April or May. These fish boast exquisite flavor and high oil reserves due to their tumultuous journey up the steep river making them an excellent choice for grilling, steaming, broiling, sautéing, baking, poaching and smoking.
- California and Washington: Early May through end of summer, on and off; sizes 7/11, 11/18 and 18up; H&G
- Southeast Alaska (troll): Year round; best runs in spring (starting early May) and summer (July 1 and on); sizes 7/11, 11/18 and 18up; H&G
- Taku River: From early May; sizes U/10, 10/18, 18up; H&G
- Copper River: From early May; O/R size; H&G
- Columbia River: June and late-August through September; sizes U/10 and 10up; fillets and H&G
- Puget Sound: Late August to early September; sizes U/10 and 10up; fillets and H&G

SOCKEYE
Sockeye (reds), harvested from around mid-May to end of July, are appreciated for their distinctly deep-red flesh that maintains the color throughout the cooking process. It’s a favorite of chefs looking for dramatic impact to their presentation as well as rich flavor.
We offer sockeye from throughout Alaska — from the Central Gulf of Alaska, including Prince William Sound and Kodiak, to False Pass and King Cove in the West. These fish offer superior flavor without the high price of Copper River runs.
- Copper River: Mid-May through June; O/R size; fillets and H&G
- Kodiak: Early June through summer; O/R size; fillets and H&G
- Southeast Alaska: Early June to early July; O/R size; fillets and H&G
- Cook Inlet: Late June through July; O/R size; fillets and H&G
- Bristol Bay: frozen only

COHO SALMON
Coho (silver) salmon is available from mid-July to end of October. Its orange-red flesh with bright skin, excellent color retention, delicate flavor with medium fat content make this species a popular consumer option.

KETA SALMON
Keta (chum), available from mid-June through mid-November, provide delicate flavor and firm texture that’s especially popular for smoking. Prince William Sound keta offers perfect value for retail promotions in June, while Arctic keta is flown in daily from Kotzebue just in time to fill the salmon lull around mid-August.
